Raspberry chia pudding

Chia seed pudding, raspberries & spirulina

I fell in love with the chia seeds when I discovered their wealth of Omega-3 ! You know, that essential fatty acid which is only found in oily fish, certain oils (rapeseed, hemp, camelina) and which is essential for the proper functioning of the brain!

For a bit of background, every year my hands would dry out when the first cold weather arrived. To the point that my fingers would develop cracks. I really struggled to get them to heal despite buying specialised creams. Then one day, while I was shopping, I was attracted to a bottle of rapeseed oil!! So I followed my instinct and bought it. I consumed 2 teaspoons a day, and after 2 days the cracks were closing up! Crazy! Since then, I regularly consume foods rich in omega-3.

I was already using flaxseed, which has the same characteristic of creating a mucilage when soaked in water. The Mucilage is a thin film of gel that surrounds the seed and also allows‘improve bowel function !

So I was looking for a nice recipe that would allow me to use this little beneficial seed regularly and with pleasure. With the chia pudding, that's perfect! It can be eaten for breakfast or as a dessert. I really like it, because it's very Easy to digest and that you can vary the tastes by making a Fresh seasonal fruit coulis.

I have a preference for the Raspberry, whose colour matches wonderfully with the deep green of the Spirulina. To do this, prefer a Powdered spirulina which will dilute easily in almond milk with the chia seeds which will have puffed up. It’s easy to do and the whole family enjoys it. If you only have twigs You can also grind it into a powder using a pestle and mortar, keeping some small pieces, that's nice too.

Spirulina twig flowers

The advantage of this pudding is that you can also make it with other Fruits (mango, persimmon, blueberries, strawberries, pears…) depending on the season, so let your heart guide you!

I hope you like this pudding because it is:

  • creamy
  • Sweet and fruity
  • quick and easy to make
  • customisable
  • Nourishing and delicious!
