What is Lacto-fermented Birch Sap – how is it different from fresh sap?
At the heart of the Bouquetot eco-estate, in the Pays d’Auge region, our birch trees yield their sap each spring for 3 to 4 weeks. This is the same sap that goes into our Fresh Sap – pure, raw, untreated, and harvested by hand.
But here, the sap doesn't stop at harvest time. At Akal, we let it live.
For 6 months, at low temperatures, without added yeasts or chemical intervention, the birch sap slowly transforms. The micro-organisms naturally present in the sap – lactic acid bacteria – multiply, consume the natural sugars, and produce lactic acids, live probiotics, and compounds that the fresh sap did not yet contain.
This process is lacto-fermentation. The same transformation that produces kefir, kombucha, sauerkraut. Except here, the raw ingredient is organic birch sap, harvested in a Norman forest.
The result: a lightly sparkling drink, with tart and lively notes, possessing different and complementary properties to fresh sap. It is not simply preserved sap – it is transformed, enriched sap, whose effects on gut flora and joint comfort are specific to fermentation.

What is the difference between fresh sap and lacto-fermented sap?
The fresh variety is raw and alive in its natural state — draining, remineralising, revitalising — only available for 3 to 4 weeks a year in March. The lacto-fermented variety comes from a natural 6-month fermentation process — it develops active probiotics and a joint-supportive effect inherent to fermentation, and is available all year round. Both are complementary: the fresh for the big spring cleanse, the lacto-fermented for continuous maintenance.
Does the taste of fermented sap resemble that of kombucha?
Yes – slightly tart, effervescent, with a distinct vegetal freshness. It’s smoother than classic kombucha, less sweet, with a clean mineral undertone from the birch. Most of our customers who enjoy kefir or fermented drinks take to it easily. For those new to the taste, diluting it in organic apple juice for the first few days helps.
Is the white film at the bottom of the container normal?

Can lacto-fermented sap be taken if one is lactose intolerant?
