Vegetable recipes: flowery onigiri & beetroot spirulina latte
Akal invites Anaïs Beltran, an alchemist of the plant world. We love her sensitivity, which she expresses in her recipes and her creations using plants. Anaïs visited us at the farm last autumn to discover fresh spirulina. She whipped up two delicious recipes for us using spirulina: onigiri and a beetroot spirulina latte.
Interview with Anaïs Beltran
I'm a large language model, trained by Google.
I'm a mum, 32, finding it hard to settle down... an artist., Head vegan chef, energy therapist… In any case, I put my sensitivity to the service of human beauty, harmony and health. After opening a Raw and vegan food restaurant in 2017, I created BEAUTIFUL PLANET In 2019. I run workshops in the great outdoors focusing on wild and medicinal plants and floral creations. It's plant alchemy for taking care of your body and grounding your spirituality (plant-based candles, smudge sticks, cosmetics...).
I've literally fallen head over heels for spirulina potions, which are truly alchemy and have reconnected me with a primordial, ancestral plant on Earth.
Anaïs Beltran
How did you meet Akal?
I knew Akali at the Colmar Eco-bio fair. I went with a friend and our children. Your team members at the stand were offering apple juice and potions to taste Spirulina Immunity and Spirulina Tonic. The Chai side of Spiral Flow immediately set my taste buds dancing; those spices always remind me of my trip to India. I wasn't too keen on spirulina as I'd had it a few years ago, in tablet form. I literally fell head over heels for this juice, which was truly alchemy andit made me reconnect with a Primordial ancestral plant on Earth. Or how to highlight the oldest bacteria present since the dawn of time on our planet and restore our power!

You've prepared 2 vegan recipes with spirulina for us. What does it represent to you, why and how do you consume it?
I love the twigs and the petals. I like to add it to my fruit-based bowls in the morning, that way I have a portion of carbohydrates that is relatively easy to digest, rich in fibre, and at the same time I get protein and iron first thing in the morning. After that, I don't have breakfast very early because I like to let my stomach rest until at least 9:30 or 10 o'clock. So often in the morning it's Herbal tea, and then my first flirt with Spirulina with my bowl. The rest of the day, I will add to it all over my dishes or on an avocado.

Pink latte recipe, beetroot and spirulina
The second recipe is a Very mild beetroot and spirulina latte. Beetroots are rich in Orphan and in betaine, a substance that acts on the liver by helping its cells get rid of toxins. Betaine also works to improve enzymatic activity to break down fats.
